Springtime meets Cinco de Mayo in this week’s meal ideas!

The Hawaiian Fajitas are a fantastic way to do something a little different on the grill.  Of course, you can cook them inside as well.  And the Strawberry Avocado Salsa would be a fun and delicious side!  Use the leftovers from this meal to create an entirely new meal – the Pineapple Chicken Quesadillas with Strawberry Salsa – ideal for a quick and easy, weeknight meal!

The Cilantro Lime Pork Tenderloin is another excellent reason to get your grill on, and then the planned overs are easily transformed into the explosion of flavors in the Island Pork Salad!

Make the most of asparagus season by enjoying the Roasted Chickpea & Asparagus Potato Salad.  And try the Garlic Parmesan Fennel Pizza – it has been described as a “delicious combination of flavors!”

Believe it or not, Mother’s Day is just a week and a half away!  The Strawberry Salad with Strawberry Mint Vinaigrette would be a perfect addition to your meal.  And we will provide more ideas next week to help you celebrate!
