Summer’s bounty is at its peak!  And this week’s meal ideas are packed with vibrant flavors that are easy to prepare.

The Skillet Jambalaya is a delicious way to enjoy okra and zucchini – and it all cooks in one pot!  Then, you can transform the planned-overs into the Cajun Inspired Breakfast Burritos – a fantastic way to start your day.

The Greek Goulash is loaded with summer veggies, and the Gremolata topping brings it all together.  You could serve it with the Grilled (or Roasted) Green Beans with Curry Dipping Sauce.  We have also made this with okra – and have even added a can of chickpeas and a handful of garlic cloves.  Bursting with flavor!

The Grilled Seafood with Summer Melon Salsa is light, refreshing, and perfect for warm evenings.  It is great with scallops, white fish, or shrimp.  And if you have the grill going, add more veggies and fruit to enjoy the sweet and savory Grilled Summer Squash & Nectarines!

If that wasn’t enough, the flavor and texture of the Summer Farro Salad will win over even those picky eaters — it’s excellent for get-togethers.  And the Watermelon Tomato Gazpacho is cool, refreshing and the perfect way to satisfy your taste buds on a hot summer day!
