The season for winter squash is just beginning, so you will have plenty of opportunities to enjoy them over the next few months. While some seasons are just starting, others are wrapping up for us – and we’re feeling all the bittersweet lasts.
On Friday, we shared what might be our last Farmer’s Market Friday segment on Good Morning KAKEland! We talked about the many varieties of winter squash and showed how easy (and delicious!) it is to make the Butternut Squash Fajitas.
Over the past 6+ years of doing cooking demos on KAKE-TV, we have created so many amazing memories. One of our favorites? When we made Egg in the Hole Acorn Squash and the next morning saw Frank, one of our favorite local TV personalities, buying his own acorn squash at the farmers’ market! He posted his “super yummy” results on Facebook the next day. So much fun!
Last weekend was our last Family Weekend at K-State – another special experience. Before that, we visited our parents in Kansas City, enjoying some delicious meals and time together with them. My Dad and I celebrated our birthdays (just two days apart!) and shared one of our favorite meals – Salmon with White Beans, Kale and Honey Mustard Sauce!
Amid all the emotion, we’re also juggling home inspections, appraisals, and packing boxes. Plus, we’re continuing to test and adapt new recipes that Zonya will feature in her Microbiome Reset program that just kicked off. Recipes like the Mango Sunrise Overnight Oats and the Kefir Kickstart Strawberry Smoothie and the Creamy Herb Ranch Dressing (amazing on the Baked Buffalo Cauliflower Salad!). Cozy, Comforting and Stress Free!
