Have you noticed yourself craving watermelon, cantaloupe, peaches, zucchini, cucumbers, or greens lately?  That’s no accident!  Your body naturally craves these foods when the temperatures heat up.

These summer superstars are:

  • Hydrating – packed with water and natural electrolytes (magnesium, potassium, calcium, sodium)
  • Nutrient-rich – loaded with vitamins, minerals, fiber and antioxidants
  • Peak flavor – this is their moment to shine…and your opportunity to enjoy them!

So Many Veggies!

We had some farmers’ market veggies that needed to be used, so we enjoyed an EBLT for breakfast and BLT Salad for lunch.  For dinner, we enjoyed a couple of flavor-loaded dishes using fresh okra, tomatoes, green beans, and more – simple and delicious!

Tacos Shouldn’t Taste This Good!

We were blessed to spend an evening enjoying these unforgettable tacos with some amazing friends.  These are so easy to make – and you will be shocked how the flavors and textures work so well together!

Cleaning Out the Veggie Drawer!

No waste here!  We had “almost gone” cucumbers, celery, and other veggies that we transformed these into a weekday lunch.  Quick, easy, and bursting with flavor — plus, an awesome way to get a huge variety of plants in one meal.

  1. Love, love, love these videos.

    I made the summer farro salad which was delicious. I asked my husband if he would be willing to try some and he said “you know I can’t eat that stuff you eat” (he’s referring to veggies and whole grains) and I said would you be willing to try one bite. He said yes and then asked me to get him a small bowl of the salad. WINNER!!!! I just quietly smiled to myself 🙂

  3. Question, the printed recipe says to cook in skillet—skinless. But on the video you say to cook with the skin? Are you baking salmon in the oven?

    Ready to try this today………look forward to the salsa and dressing!

    • Thank you for asking! Yes, you can cook the salmon in the skillet or in the oven! (You could also grill it) If you decide to cook it in the oven, just cook at 375 or 400 degrees for 12-15 minutes depending on how thick your salmon is — cook until the center is done and flakes or breaks apart easily with a fork. And, it’s your preference, skinless or with the skin on. I hope that helps and we hope you love this recipe! Thank you again!
