Is there a lonely can of pumpkin sitting in your pantry?
If so, let’s put it to work!
And if not, pick one up because we are going transform it into not just one, but two incredibly delicious ideas that are perfect for Fall!
If you read last week’s coaching tip, you know that we are all about reducing stress in the kitchen this time of year.
Get ready to make magic happen with just one can of pumpkin!
One can of pumpkin puree = a double batch of the sweetly spiced Harvest Pumpkin Bars and the creamy, dreamy Pumpkin Tiramisu Overnight Oats. Both of these recipes have been described as AMAZING, INCREDIBLE, and CRAZY GOOD! (An added bonus…they are both gluten-free, just in case you need to accommodate dietary preferences over the holidays.)
First, let your food processor, or Ninja, do the mixing for a double batch of the Harvest Pumpkin Bars (trust us here, you won’t regret using a 9 x 13 inch glass baking dish to make a double batch of these scrumptious bars!). While the cozy aroma fills your kitchen, put together the ingredients for the Pumpkin Tiramisu Overnight Oats. A few simple ingredients that include pumpkin, spices, and a little bit of coffee or espresso (hello, tiramisu vibes!). Let the oats chill overnight in the fridge for an easy grab-and-go breakfast that serves two, and then you and your family will be enjoying the pumpkin bars for dessert all week long!

AN EXTRA BONUS!
Not only are both of these recipes absolutely delicious, but the real bonus is canned pumpkin is a nutritional powerhouse! This bright orange wonder is packed with vitamin A for strong immunity and glowing skin, fiber for a happy gut, and antioxidants to keep you energized and feeling your best.
ONLY ONE INGREDIENT!
It’s important to know, we are talking about 100% pure pumpkin – no other added ingredients. This is different from canned Pumpkin Pie Mix, which has added salt and sugar. For example, Libby’s brand makes an Easy Pumpkin Pie Mix, and its ingredients include salt, spices and 16 g (4 tsp) of added sugar for just 1/3 cup.
As with all canned fruits and vegetables, it is best to look for cans that are BPA free.
STOCK UP!
According to the Agricultural Marketing Resource Center, 90% of the sales for canned pumpkin take place every year during the 4-month period from October to January. And the best news?! Canned pumpkin is not just for Fall! Think about making it a nutritious and delicious addition to your meals all year long. So, be on the lookout for those post-holiday discounts! Many grocery stores will have excess inventory they don’t sell during the holiday season. If you can find it marked down in January or February, stock up because it will typically last 2 years or longer in your pantry.
