A spaghetti squash is really easy to cook. You can bake it or it’s even quicker to cook in the microwave – watch our video too!
If you want to bake it: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper or foil. Cut the squash in half and scrape out the seeds in the middle of each half. Place the squash halves, cut side down, onto the baking sheet. Bake for 40 minutes, or up to one hour, or until the insides of the squash pull away in easy strands with a fork. The cooking time will depend on the size of your spaghetti squash.
Microwave version: cut the squash in half and scrape out the seeds out of the middle of each half. Place the cut sides down in a glass container with about 1/4 cup of water. Cook on high for about 6-7 minutes (it may be best to start with 6 minutes, and then add more time if needed). When cool enough to handle, use a fork to pull the insides of the squash away in easy strands. The squash strands should still have a little crunch to them. This is a great alternative to pasta noodles and we think as leftovers they survive much better than pasta!
