Summer flavors at their best! As promised last week, we have included more Hatch chile-inspired ideas including the Hatch Chile Southwest Quinoa, which combines in-season summer veggies for a delicious summer meal with a kick! As a bonus idea this week, we highly encourage you to make a batch (or two!) of the Roasted Hatch Chile Guacamole…it would go great with several of this week’s ideas including the Southwest Quinoa, the Healthi-Fried Green Tomatoes and the Spicy Veggie Quesadillas!
The Summer Farro Salad has mind-blowing flavor and is an excellent way to enjoy in-season cherry tomatoes! You can also use your cherry tomatoes in the End of Summer Chicken Foil Packet, which also includes okra, beets or whatever veggies you are in the mood for.
If you are craving a burger, we hope you will try the Banh Mi Burgers…these were inspired by a local chef and friend who makes some truly inspiring dishes! The burgers are simply seasoned, and then the quick-pickled veggies, fresh herbs and the Sriracha “mayogurt” provide just the right combination of flavors and textures. These would pair perfectly with the Watermelon Blueberry Salad!
