Well, the groundhog wasn’t fooling around this year! Maybe he packed all the extra six weeks of winter into this past week. Warmer weather is ahead, right?!
If you are still stuck in the cold temps, you will love the Slow Cooker Chicken Pho this week! It has great flavor and would go great with the Sriracha Roasted Broccoli.
We are also excited to share the Cod Reuben Sandwich! It is a different spin on the classic Reuben sandwich and the Russian dressing is absolutely amazing. Should we admit that we have made these three times in the past two weeks?! They are that good!
For those observing Lent, a couple of other ideal meals are the Gnocchi with Butternut Squash, Chickpeas & Kale and the Thai Stuffed Sweet Potato…the perfect way to celebrate “Cook a Sweet Potato Day” on Monday! Not eating meat on Fridays really isn’t a sacrifice with so many incredibly good seafood and veggie-forward meals! And, to help you start thinking about the warmer days ahead, the Citrus Salad with Maple Vinaigrette would be an excellent side with any of these.
For a quick and easy meal (that no one will believe was quick and easy), don’t miss the Strip Steak Over Shaved Brussels Sprouts…cooking the steaks over high heat creates a mouthwatering crust, and then the combination of the Brussels sprouts, goat cheese, pistachios and balsamic make for a truly delicious meal!
