We hope you were all able to enjoy some fantastic Thanksgiving dishes…and discovered some great-tasting uses for all those leftovers!
If EASY needs to be on the menu (maybe you are recovering from last week or preparing for the next holiday rush), you will love this week’s meal ideas! The Mediterranean Inspired Pork Tenderloin and Baked Salmon Patties with Spicy Tartar Sauce are both crazy good. And, if you still have leftover turkey hanging around, make sure to enjoy the Turkey Banh Mi! If you don’t have leftover turkey, this would also be great with leftover pork tenderloin.
Roasting is the theme with the sides this week. The Roasted Broccoli with Peanuts is super-easy and the roasted carrots add a delicious pizzazz to the Roasted Carrot Spinach Salad! Have you ever roasted dates? The Roasted Stuffed Dates are so easy to put together and have a sweet and salty flavor combination that is irresistible — they would be ideal to serve at a holiday party!
If you are a fan of the Zuppa Toscana soup from Olive Garden, you will LOVE the Sausage, Potato & Kale Soup. Can it really be more delicious and nutritious than the restaurant version? Yes…and cheaper! This would also be an excellent choice to serve at a holiday party.
Thank you for your help in continuing to grow our community of people who are realizing the amazing taste, nutrition and other benefits of keeping it simple and EATING REAL! More holiday-inspired ideas coming the next few weeks!
