Week of September 7, 2020 - Weekly Meal Ideas


Welcome to Fall 2020!  While the fall equinox (the astronomical season) doesn’t arrive until September 22nd, the meteorological fall season started September 1st!  Whichever definition you use, the farms – and farmers’ markets – are definitely transitioning from summer to fall produce.

This week, we are taking advantage of the late summer produce and their incredible flavors, while also transitioning into some of the early fall produce like apples, potatoes and spaghetti squash.  Plus, while we can’t travel the world right now, we want to help bring the world to your kitchen table!

For a taste of Asia, enjoy the Sweet & Sour Chicken Stir Fry and the Bombay Curry Kale Chips!  You should see a resurgence of kale as we head into fall and it actually gets sweeter as the temperatures drop.  Then, take a trip to the Mediterranean with the Baked Falafel with Spicy Feta Dip and the Tabbouleh with Apples & Walnuts.  Both are full of flavor and the tabbouleh has a delicious sweetness and crunch.

For a taste of the southwest, keep enjoying those Hatch chilies with the Hatch Chile Stew.  And, if you never had a canary melon, this is the ideal time to pick one up and try the Canary Melon Salsa!

Finally, enjoy spaghetti squash in the Pesto Spaghetti Squash with Kale & Sun-Dried Tomatoes — it’s loaded with flavor and is simple and easy to prepare.  Doesn’t get any better than that!

We will keep the late summer and early fall ideas coming over the next couple weeks, including some ideas to bring a little bit of Germany to your kitchen and celebrate Oktoberfest!
