Welcome to March!  St. Patrick’s Day, March Madness and the official start of Spring are just around the corner – and this week’s meals are a bridge between cozy winter comfort and fresh spring flavors!

The Mexican One Pot Pasta is everything we love about simple meals – hearty, flavorful, and all made in one pot.  The yogurt adds a healthy creaminess.  Pair it with the Citrus Salad with Maple Vinaigrette, which has been described as “a big bowl of sunshine,” for a meal that feels both satisfying and fresh.

Winter isn’t quite done yet, so enjoy the comforting African-Inspired Peanut Stew – a little creamy, a little spicy, and packed with bold flavor.  Serve it alongside the Whole Roasted Cauliflower with Chimichurri Sauce to add even more plant power (and grab your share before it disappears!).

Another easy one-pot meal is the Southwest Tofu Scramble, loaded with vibrant southwest flavors.  Since we are celebrating all things green this month, it pairs beautifully with the refreshing Green Fruit Salad.
