Week of August 1, 2022 - Weekly Meal Ideas


Just hearing “August” is a little bittersweet…the kids will be going back to school soon and summer will be winding down.  The meal ideas this week will help you savor those summer flavors while you can!

As we mentioned in the coaching tip on Tuesday, this is the perfect time to enjoy Shishito (or Padron) Peppers!  In many parts of the country, okra is now in season and, if you have some busy weeknights coming up, the Curried Okra & Tomatoes are ideal!  It would go great with the Watermelon Jicama Mint Salad.

If you are looking for some new ways to enjoy zucchini, make sure to try the Chicken & Grilled Veggie Tacos and the Greek Goulash.  The Goulash is loaded with a flavorful combination of meat, vegetables and spices – serve it with the Cucumber & Tomato Salad with Green Goddess Dressing for a delicious summer meal!

Peaches and cantaloupe are turning super-sweet right now!  The Summer Peach Lettuce Wraps and the Grilled Seafood with Summer Melon Salsa are both simple to prepare and are excellent examples of how you don’t need a lot of time to prepare refreshing, absolutely delicious meals!
