Such a busy week ahead! Next Tuesday is Shrove Tuesday, also known as Fat Tuesday and Pancake Day! This tradition comes from the old English custom of people saying confessions for the wrongs they’ve done, and then using up their kitchen ingredients so they were ready to fast for Lent. Celebrate by enjoying the quick and easy Oatmeal Raisin Pancakes or the Cajun Shrimp & Guacamole Pizza (yes, Cajun shrimp and guacamole all on the same pizza and it’s really delicious!).
This year, Wednesday is both Valentine’s Day and Ash Wednesday. A couple of ideal meals are the Pink Salmon with Balsamic Cherries and the Steel Cut Mushroom Risotto. Either of these would go great with the Pecan Spinach Salad or the Garlicky Cauliflower & Kale with Dates & Pecans. For dessert? If you haven’t already, check out the Dark Chocolate Mousse!
We are excited to share the Comforting Chicken & Dumplings this week! This recipe was requested by an Eat REAL America member, and as we mentioned in Tuesday’s coaching tip, our first attempt was a “failure.” But this led to a version that we hope you love (using gnocchi for the dumplings)!
