Happy Cinco De Mayo!  To help you celebrate, we have included a couple of Mexican-inspired meal ideas for you to enjoy!  Many believe Cinco de Mayo is Mexico’s Independence Day, but actually that day is celebrated on September 16, which is a much more important holiday in Mexico.  And, Cinco de Mayo is celebrated much more in the U.S. than it is in Mexico!

To get you in the mood and get “out of the box,” try the Swiss Chard and Black Bean Enchiladas, which conveniently includes rhubarb to help you with the May Superfood Challenge!  Then, there is the incredibly good Southwest Wedge Salad…ideal for any time you want to enjoy southwest flavors!  Remember, there are many more Southwest-inspired ideas on the website!

Savor the convenience of the 2-for-1 “planned-over” meal with the Slow Cooker Jamaican Pulled Pork that turns leftovers into a delicious Hawaiian Stuffed Sweet Potato.  Or keep it quick and easy and have a breakfast dinner with the Spaghetti Squash Hash — super good!
