As we embrace the winter season (and enjoying the food, not the bitter temperatures!), many of the ideas this week are ideal for busy weeknights…they come together quickly and taste great!
The flavor combination of the Slow Cooker Mango Chicken Stuffed Peppers is incredible, and the best part is the slow cooker does the majority of the work! The Shrimp and Brussels Sprouts Stir Fry is a delicious way to sneak in a cruciferous veggie, and the Pad Thai with Sweet Potato Noodles is a fantastic spin on this favorite Asian dish — it also goes perfectly with the Spiced Cauliflower Rice or the Honey Mustard Roasted Green Beans!
According to one mom, “the Lamb Spinach and Feta Wraps were so good we will have to double the recipe next time — the kids loved them!” If you love Caesar salad, try the Caesar Salad with Avocado Dressing — we have been told “the dressing is so good our teenage daughter was eating it with a spoon!”
