As we savor asparagus season, we have included two more incredibly delicious ways to enjoy this springtime vegetable…the Spring Parsnip and Asparagus Pasta and the Grilled Scallions and Asparagus will both blow your taste buds away! These will help keep your April Superfood Challenge going!
As we mentioned in this week’s coaching tip, homemade dressings can be surprisingly simple and we have included several in this week’s meal ideas. The Kale and Blueberry Salad has an excellent tangy honey lemon vinaigrette, the Apple Cabbage Slaw that goes with the Maple Mustard Pork Chops includes a crazy simple apple cider vinaigrette, and according to an Eat REAL America member, the Shrimp and Avocado Salad dressing is “so good we not only use it for dressings, but marinades too!”
Remember to enjoy eating in-season and visit your local farmers’ market! They are now opening in most areas and are the best place to get many of your ingredients for the week!
