Week of September 18, 2017 - Weekly Meal Ideas


As we continue to transition from summer to fall, we are trying to stretch the last of the summer produce while we are starting to crave all of the great harvest this next season has to offer!

So, this week’s meal ideas are intended to help you enjoy both…use summer’s mouthwatering fresh corn not only for the Blackened Salmon Tacos with Corn Salsa, but also the Quinoa Corn Chowder.  Then, a delicious way to enjoy beets is in the Roasted Beets with Spicy Yogurt Sauce – wonderful flavor with a slight kick!  Then, the Butternut and Black Bean Enchilada Skillet is an excellent one skillet meal that the whole family will love…and may be even better the next morning with an egg on top!

Apples, of course, make it feel like fall, and take pork chops to the next level in the Pork Chops with Crunchy Apple Slaw.  And, if you are craving pizza, this absolutely fantastic Moroccan Spice Lamb Pizza was inspired by one of our favorite local restaurants, Public at the Brickyard…warning, it will disappear quick!
