Week of September 14, 2020 - Weekly Meal Ideas


As we continue to transition from summer to fall, we want to help you use up that end of summer produce while also enjoying the seasonal foods and flavors that autumn brings (like pears, apples, butternut squash and a resurgence of greens…just to name a few).

With schools and other activities ramping up again, we also want to provide some quick and easy ideas to help get you through the week.  The Grilled Veggie & Tortellini Salad, Apple Walnut Pizza and Squash Wild Rice Skillet are all ideal for busy weeknights.

The Prosciutto Wrapped Jalapenos are loaded with flavor and are proof that stuffed jalapenos can be delicious even without the cream cheese.  Speaking of stuffing things, you can also stuff your sweet potato with chipotle steak, bell peppers and avocado crema in the Chipotle Steak Fajita Stuffed Sweet Potatoes.

The No Mess Rustic Chicken is a fantastic way to use those veggies you pick up at the farmers’ market and it would go great with the Pear & Butternut Squash Salad.  An excellent meal to enjoy the transition from summer to fall!  Another flavor-loaded way to ease into fall is to savor our first pumpkin recipe of the season – the Pumpkin Spice Granola.  It is perfect with milk, yogurt or all by itself!
