Week of October 5, 2015 - Weekly Meal Ideas


Hello Fall!  Many of us are starting to finally see some cooler temperatures…bring on the soups, stews and chowders!  Not to mention winter squash and pumpkin!  We have a few ideas in this week’s meals to start getting you in the mood for fall!  The Vegetable and Herb Chowder and Butternut Squash Salad with Warm Cider Vinaigrette will both do the trick!

I can’t stop thinking about how good the Skillet Jambalaya and Eggplant and Mushroom Curry are — perfect for crazy weeknights when you are too tired to do much for dinner!  The Simple Jerk Chicken and Seasoned Catfish Sandwich are also great weeknight options!

If you have ever wondered what to do with figs…they are great roasted!  And this is the perfect time of the year to take advantage of the short season for fresh figs.  The Roasted Fig Salad is an incredibly delicious way to enjoy them!
