During our recent travels to Montana we enjoyed a Roasted Cauliflower Sandwich that we had to recreate to share with all of you! The combination of the roasted cauliflower, Romesco sauce, and shredded cabbage and apple give this sandwich amazing flavor!
Zonya was also recently inspired by local restaurant where she and some good friends fell in love with a Lemon Chia Seed Pudding. They came up with their own fantastic version, which is especially good when topped with berries and granola or nuts.
If you are starting to think about Halloween, the Slow Cooker Vindaloo Chicken is loaded with flavor, and it practically cooks itself to help you get your trick-or-treaters ready and out the door! Or, if you need another quick and easy meal, the Cheeseburger Quesadillas and the Stuffed Sweet Potatoes with Dates, Walnuts & Gorgonzola would both be ideal.
The Maple & Walnut Salmon is another super easy meal and adds a delicious flair to your salmon! It would be perfect with either the Maple Garlic Roasted Squash or the Warm Pear Salad with Gorgonzola.
