Sweet potatoes, winter squash, apples, pears, pumpkin and pomegranates…these are just some of the ingredients in this this week’s autumn-inspired meal ideas!
The Spicy Peanut Sweet Potato Soup and the Cinnamon Pork Chops will warm you up on a chilly November night, and the Whole Grain Honey Cornbread and the Pomegranate Pear Salad would both be ideal sides.
The Dominican Inspired Burgers are inspired by a delicious street food that has become extremely popular in the Dominican Republic. There is no “standard” recipe because each street food vendor has their own take on it. We top our flavor-loaded burgers with sautéed red cabbage and kale, along with a simple sauce and pickled onions. We hope you love them!
We also have included some incredibly good quick and easy meals that would be fantastic for either breakfast or a quick weeknight dinner. One of our favorite members, Bev, turned us on to Maple Butter, which is currently available at Aldi. It is slow-churned pure maple syrup and is delicious on so many things including the Easy Pumpkin Pancakes! The Sweet Potato Hash is also an excellent option – remember, being short on time doesn’t mean you have to sacrifice great taste and nutrition…it just requires a little planning!
