Now that Spring has officially started, we are loading the meal ideas with more Spring-inspired ingredients and meals!

Asparagus is a key ingredient in the Green Minestrone with Pistachio Kale Pesto, mango adds the sweet juicy flavor to the Mango and Black Bean Stuffed Sweet Potatoes, and the Lemon Chia Seed Muffins are absolutely delicious and will help you feel like Spring has arrived!

If you are itching to get outside and fire up the grill, we have included a fantastic Peruvian Inspired Quinoa Bowl with flavor-loaded grilled chicken and veggies!

As we transition seasons, and just in case you have some winter squash left (such as a butternut squash) lying around, try the Roasted Squash and Spicy Onions — it’s one great-tasting side dish, and maybe even better as a breakfast or breakfast dinner with an egg on top!
