Have you been celebrating National Slow Cooking Month this January?!  It’s not too late!  The Slow Cooker Carnitas Tacos lets the slow cooker do the work for a delicious stress-free dinner.  And the Southwestern Coleslaw is a perfect topping.  This would also be ideal for your Super Bowl party!  Then, transform any leftovers into the quick and easy Carnitas Taco Pizza!

If you are craving some comfort food, the Chicken Pot Pie with Cornmeal Crust will hit the spot – and it’s bursting with veggies so it will help keep you and your family healthy.  One of our favorite veggie and flavor loaded meals is the Roasted Vegetable Pesto Pasta — feel free to use your favorite variety of vegetables!

We recreated an amazing salad from one of our favorite Kansas City restaurants, the Kale Chopped Salad, it provides a super-tasty combination of cruciferous veggies, “fried” shallots, optional bacon and a crowd-pleasing Maple Almond Vinaigrette!

Want a creative way to enjoy super-healthy chickpeas?  Try the Snickerdoodle Cookie Hummus (it’s a snickerdoodle cookie in a dip!) or the Baked Falafel with Spicy Feta Dip (excellent served in a pita or as a salad),  Plus, they are both quick and easy!
