There are several opportunities to celebrate over the next several weeks! Did you know Tuesday, February 25th, is Shrove Tuesday (also known as Pancake Day)?! Shrove Tuesday is the day before Ash Wednesday, which marks the start of the Lenten season. This day comes from the old English custom of people saying confessions for the wrong things they’ve done, and using up ingredients so they were ready to fast for Lent. The ingredients most people had on hand were eggs and milk…combine this with one or two other ingredients and you have PANCAKES! In other countries, Shrove Tuesday is known as Mardi Gras or Fat Tuesday – again involving the idea of using up food before Lent.
So, go ahead and celebrate REAL food style! The Banana Oat Pancakes are healthy and delicious – using only REAL ingredients of course. Plus, you can add a little Mardi Gras to your table with the Jambalaya Lentil Bowl or the Cajun Chicken Pasta! For a sweet treat this week, keep the Almond Joy Cookie Bites on hand.
For those celebrating the season of Lent, we have also included excellent ideas such as the Chile Lime Salmon Fajita Salad and the Thai Quinoa Bowl with Peanut Sauce! We will continue to provide at least one fish or seafood recipe the next few weeks and, of course, vegetarian options too.
Are you looking for something special to do for Lent? What about a commitment to only eat REAL food?! Or, if you are already doing this, what about encouraging a family member or friend to join you?! It could be the life-changing habit you have been searching for!
