What is one of the best things about eating in-season? It’s enjoying amazing seasonal produce while it is at its best. Then, once you start to feel like you have had your fill, you start getting excited because September (and Fall!) is right around the corner with more fantastic options such as winter squash, crisp apples, pumpkin and more. But wait!…we will stop, we are still trying to squeeze as much out of summer as possible!
We have some big-time hits this week that went over REALLY well with our teenage taste-testers…the Blackened Salmon Tacos with Corn Salsa, Summer Stuffed Peppers and Spicy Orange Chicken! Plus, the Mushroom Pesto Pizza was inspired by a similar mouthwatering version we enjoyed this summer in San Diego!
The sides this week are also incredibly good! Pick up fresh watermelon, zucchini, and tomatoes and you will be all set to enjoy the Watermelon Feta Salad, Zucchini Muffins, and Healthi-Fried Green Tomatoes!
Look for ideas coming next week for your Labor Day celebration! If you have the chance this weekend, visit your local farmers’ market and “shake the hand that feeds you!”
