It’s April, spring has officially begun, but Mother Nature is desperately trying to catch up, especially here in the Midwest! So, we have the best of both worlds in this week’s meal ideas…if you want to begin to savor springtime flavors, try the Sautéed Asparagus and Leeks, Baked Falafel with Spicy Feta Dip, or the Pasta with Mint, Lemon and Spring Peas – they are all flavor-loaded and fantastic! You can even add sliced hard-boiled eggs as a topping for the Baked Falafel if you are overflowing with eggs from Easter.
Or, if you want to curl up with a warm and hearty cozy meal, try the Simple Italian Pasta and Meat Sauce or the Oven Roasted Orange Chicken – both are delicious and go perfectly with the Garlic Herb Breadsticks.
Be on the lookout for farmers’ markets starting up – many markets begin in April. We can’t wait to enjoy that fresh local asparagus!
