You know the old saying…”when March comes in like a lion, it goes out like a lamb.” Whether you think March in your area is starting out like a lamb or lion, we are going to be optimistic and simply remember that Spring – and farmers markets and fresh produce – are just around the corner!
We have included some fantastic meal ideas this week, including one of our favorite ideas of turning one meal into two! The Slow Cooker Cuban Inspired Pork makes a delicious meal the first night (try it on a salad, as a sandwich or on a sweet potato), and then the leftovers can be used for an incredibly good Banh Mi Grilled Cheese! And, if you still have leftovers, there are some other great meal ideas on Eat REAL America!
To help get your mango mania on for the March Superfood Challenge, we have included a Kohlrabi and Mango Salad and a Mango Salsa — both are absolutely delicious! If you are looking for a great meatless meal, the Cajun Shrimp & Guacamole Pizza is fantastic…SO MUCH better than delivery!
And, for those who might be intimidated at the thought of making risotto, give it a try this weekend! The Brown Ale Risotto with Sausage & Spinach is fantastic…and a good brown ale adds tremendous flavor!
We will be bringing you some great-tasting St. Patrick’s Day ideas next week!
