If you asked us to pick a favorite from this week’s meal ideas, we are not sure we could do it! One of our favorites is the Roasted Veggie Guacamole – who knew roasted vegetables and guacamole could taste so good together…this one has fantastic flavor!
A few other ideas this week scream summer…the Thai Summer Salad, Cod Vegetable Packet with Lemon and Dill, Roasted Beet and Mixed Berry Salad, and the Summer Peach Lettuce Wraps — all delicious and ideal to take advantage of in-season ingredients! Make sure to get your list ready for the farmers’ market!
For your upcoming holiday planning, the Baked Blueberry Oatmeal will definitely impress if you are serving breakfast to overnight family or friends! We enjoyed this on Mother’s Day and it was so good, we made it again a couple of weeks later for family who were visiting from out of town.
This week, we also want to give a “shout-out” to all the Eat REAL America members who are taking steps to inspire others to realize and enjoy all the benefits of REAL food!
