We hope everyone is enjoying the mild summer and taking full advantage of the fresh in-season ingredients! I keep telling myself to enjoy it now because I am sure the “super-hot Wichita summer we are used to” is just around the corner! The Shrimp Po-Boy is delicious and, even though our daughter still thinks The Flying Stove version is better, she agreed this one tastes great! A week wouldn’t be complete if we didn’t include ideas to use fresh farmer’s market ingredients! Both the Crispy Oven Roasted Okra and Kale and Coconut Veggie Stir Fry are fantastic! The Pasta Primavera with Grilled Sausage is a great way to enjoy all of your favorite veggies and the Raw Pad Thai is perfect if you are wanting a pasta-like meal without the pasta! Fire up the grill and enjoy the Avocado and Spicy Mayo Stuffed Burger — it goes great with the Sweet Potato Curly Fries or the Tropical Carrot Salad!
