Welcome to fall 2024! We have lots of fall flavors to keep you inspired within the next few weeks.
If you caught our coaching tip on Tuesday, you read about the Baked Buffalo Cauliflower Salad we enjoyed in Anacortes, WA. It was so good we recreated it for the Eat REAL America community – we hope you enjoy it as much as we did!
This is the ideal time of year to make homemade pesto, especially if you have fresh basil hanging on. Then, you can use your pesto to transform roasted vegetables and pasta into the amazingly delicious Roasted Vegetable Pesto Pasta! We encourage you to double the roasted veggies, and then use the “planned-overs” to whip up some Pesto Veggie Breakfast Burritos.
We are also excited to share the Lion’s Mane Crab Cakes – with Lion’s Mane mushrooms becoming more readily available (we get ours at our local farmers’ market), you will be astonished how much these look and taste like traditional crab cakes! They would go great with the Fall Fattoush Salad or the Broccoli Poppers.
The Chocolate Pumpkin Spice Granola will really make it feel like fall – it is incredibly good on yogurt, in a bowl with milk or all by itself! And now that spaghetti squash is showing up in full force, make sure to add the Thai Seafood Curry with Spaghetti Squash to your meal plan.
