Have you planned your Valentine’s Day meal yet?  We have included some flavor-loaded “feel good” foods in this week’s meal ideas.

Let your slow cooker do the work and enjoy the Slow Cooker Borscht Stew – it’s amazingly delicious!  It would go great with the Roasted Cabbage with Parmesan Walnut Crumble.  Or turn on some “mood music” while you make the Steel Cut Mushroom Risotto – an ideal way to enjoy those cholesterol-sponging oats.  Enjoy it with a salad and the Chocolate Souffle for a fantastic memorable meal!

If you need something quick and easy, the One-Pot Puttanesca is so super-easy.  And for something to keep you warm and cozy, the Lemony Lentil & Chickpea Soup will hit the spot!  You could serve it up with the Roasted Beet Salad with Candied Pecans.

Just in case you are looking for a last-minute Super Bowl idea, the Beef Queso Dip will blow away the version with Velveeta and Rotel!  Yes, it is a bit of an indulgence, but it is the Super Bowl after all.  And if you are going to indulge a little, it’s great to have a healthier version that doesn’t sacrifice flavor (and sneaks in a few veggies!).
