An explosion of flavors in this week’s meal ideas!  The veggie-loaded Roasted Ratatouille is bursting with summer colors and flavors and would be ideal with the Watermelon Blueberry Salad.

This is a great time of year to enjoy fresh Mexican flavors like the Mexican Black Bean Veggie Pizzas.  And since we are now entering Hatch chile season, they would be perfect with the Hatch Peach Salsa!  Plus, the Chicken Taco Salad with Cilantro Vinaigrette has been described as “awesome” and would be a refreshing meal on a hot summer night.

Enjoy the fresh basil from your garden in the Pesto Fish Packet with Tomatoes & Green Onions.  The added bonus is that cleanup is a breeze on this one!  Be sure to save some basil for the Tomato & Basil Bruschetta – the recipe was inspired by an amazing friend and chef who is now impressing his guests in Washington DC!

The Sausage, Kale & Okra Sauté is a quick and easy way to enjoy fresh in-season okra.  Everything comes together in one pan and the leftovers (if there are any) would be excellent for breakfast the next day with an egg on top!
