We were so excited to get our first farmers’ market asparagus of the year last Saturday! As we savor asparagus season, we have included another fantastic way to enjoy this springtime vegetable…the Asparagus Stuffed Sweet Potato is crazy good with just the right combination of flavors and textures!
We recently had a member request for another grapefruit recipe and we think you will love the Roasted Fennel & Grapefruit Salad. It’s absolutely delicious and would go great with the Springtime Minestrone. You could also add asparagus to either of these meals!
Add a little ethnic flair to your meals this week and try the Slow Cooker Vindaloo Chicken (which would be excellent with the Spiced Cauliflower Rice) or the Vietnamese Lettuce Wraps.
Most of us think about steel cut oats as a breakfast food, but we hope you will try the Steel Cut Mushroom Risotto for dinner this week. It will blow your perceptions away and it’s an ideal way to get the benefit of those cholesterol-sponging oats. Plus, you can enjoy it with a glass of your favorite red wine!
