Week of April 13, 2015 - Weekly Meal Ideas


I am getting VERY anxious for fresh Spring and Summer produce!  Our local farmers’ market is now open and I can’t wait to get my hands on whatever is available!

Since this time of year seems to be a little crazy with busy weeknights, we have included some great quick and easy meals and a great slow cooker idea!  The Strip Steak Over Shaved Brussels Sprouts is absolutely delicious!  Also, you can use your slow cooker to magically make tender pork that simply falls apart…it is great on its own and is fantastic when used for the Slow Cooker Carnitas Tacos.  Plus, you can top the tacos with the Southwestern Coleslaw…big time YUM!  The Roasted Cauliflower Pasta has outstanding flavor, as does the Moroccan Sweet Potato Shepherd’s Pie.

In case you didn’t know, this Sunday (April 12) is National Grilled Cheese Sandwich Day.  To celebrate, we have included a Spiced Chicken and Bell Pepper Sandwich.  This is a different spin on grilled cheese…the taste is fantastic and it comes together quick and easy!
