Mediterranean Stuffed Mushrooms

Why We Like It


Adding a little seasoning to mushrooms makes them taste great, but stuffing them?  Well, let's just say, that takes the flavor to another level!

Preheat the oven to 400 degrees

Prepare the Mushrooms:

  • 12 mushrooms (such as Baby Bella, or 3-4 portobello mushrooms)

Rinse the mushrooms and pat dry.  Pop the stem off each mushroom and place on a greased baking sheet.  (If using portobello mushrooms, remove the stem and use a spoon to scrape the gills out of the mushrooms.)

Make the Stuffing and Cook the Mushrooms:

  • 3 Tbsp feta cheese (crumbled)
  • 3 Tbsp mozzarella cheese (shredded)
  • 6 sun-dried tomatoes (chopped)
  • 2 green onions (sliced)
  • 1/4 cup fresh basil leaves (chopped)
  • 1/3 cup Panko bread crumbs
  • 1 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper

Add to a medium size bowl and stir to combine.

Place a heaping spoonful of the stuffing on top of each mushroom until full.

Bake the mushrooms for 15-20 minutes (20-25 minutes for portobello mushrooms) until mushrooms are slightly tender, cheese is melted, and topping is slightly browned.
