An Eat REAL America member requested a healthy chicken scampi recipe (similar to the Olive Garden version). Based on this request, we created the Baked Chicken & Veggie Scampi, which is full of flavor and it all bakes in one dish! We used Palmini (hearts of palm) angel hair pasta and it was saucy, delicious and fantastic leftover. You could even use some of the leftover over chicken and enjoy it in the Chicken Kale & Apple Salad with Pecans & Feta, which is perfect for fall!
