Welcome to summer (officially)! Even though it’s a little early, we wanted to begin providing meal ideas to help with your 4th of July planning! What better time to impress your family and friends…and inspire them to eat healthy at the same time?!
If you are firing up the grill, you can’t go wrong with the Fiesta Grilled Fish Tacos (inspired by a delicious meal at a Kansas City restaurant) or the Grilled Balsamic Chicken Legs. You could even grill the quick and easy Zucchini Pizza Boats. Any of these would go perfectly with the BLT Salad or the Red Cabbage Salad with Blue Cheese & Pecans (farmers’ market ingredients make these even better!).
If you read Tuesday’s coaching tip on cucumbers, the Creamy Cucumber Soup is a fantastic way to stay hydrated and beat these hot temperatures! They are also a refreshing ingredient in the Mediterranean Meatball Gyros.
Of course, the holiday wouldn’t be complete without a REAL dessert…the Strawberry Rhubarb Crumble! Crazy good summer treat with a scoop of vanilla ice cream and ideal to serve your family or friends!
