Zucchini Pizza Boats

Why We Like It


Not your traditional pizza!  This is a great quick and easy meal -- all you need is your favorite pizza sauce and your favorite toppings!  Mix it up and add whatever you like best!

Preheat the oven to 400 degrees

Prepare the Zucchini:

  • 8 zucchini (cut in half lengthwise)

Wash each zucchini and cut each one in half lengthwise, also cutting off the ends.  Using a spoon, scoop out the seeded center of each zucchini and discard the seeds.  Place them on a baking sheet.

Assemble the Pizza Boats:

  • 1 cup marinara sauce (or your favorite pizza sauce)
  • 1 cup mushrooms (sliced, type of your choice)
  • 1/2 cup red onion (sliced)
  • 1/2 cup kalamata greek olives (sliced)
  • 1/2 cup cherry tomatoes (cut in half)
  • 2 jalapenos (sliced, OPTIONAL)
  • 1/4 cup parmesan cheese (shredded, or mozzarella, OPTIONAL)

Spread a layer of marinara or pizza sauce on each zucchini and then top with everything else.  Bake for 15-20 minutes until they are tender but not too soft.

Serve and Enjoy!

  • 1/4 cup fresh basil leaves (chopped)

Serve pizza boats topped with fresh basil.

Quick Tips


To keep your zucchini pizza boats from rolling from side to side on the baking sheet, you can cut a piece off the bottom of the “boat” so it will sit flat on the baking sheet.
