Week of September 4, 2017 - Weekly Meal Ideas


As we all celebrate Labor Day this weekend, we hope you have a chance to slow down and enjoy time with family and friends.  And, of course, we have you covered with excellent meal ideas that will keep you eating happy (and healthy)!

As an early welcome to fall, we added butternut squash to the lineup this week…and this one is so good, we can’t stop thinking about it…Roasted Butternut Squash Fajitas!  They are incredibly delicious and would be ideal to serve a crowd because everyone can customize their own, loaded up with toppings such as Hatch Chile Guacamole or Salsa Fresca!

If you are hosting or attending a get together this weekend, consider serving or taking the Hatch Peach Salsa or Herbed Orzo Salad with Grilled Zucchini — you will definitely impress your family and friends.  And, the Mason Jar Fruit Crisp would provide an inspiring dessert!

Or, if you just need something easy because you have a lot of relaxing to do, enjoy the Skillet Jambalaya or Egg Topped Cauliflower Couscous with Bacon — both are absolutely delicious!  Plus, this is a great way to transition from the August Superfood of the Month (okra) to the September Superfood of the Month (cauliflower).

If you’re hitting the farmers’ market, here are some items to consider for your shopping list for this week’s meal ideas:  apples, butternut squash, cauliflower, corn, jalapenos, okra, onions, peaches, peppers, zucchini…plus, don’t forget your favorite local meats and breads!
