Week of March 28, 2022 - Weekly Meal Ideas


We are sending all kinds of deliciousness your way this week!  Just in case you picked up some hearts of palm after reading Tuesday’s coaching tip, they are a great addition to the Brazilian-Inspired Pizza.  The roasted red pepper chimichurri provides a flavor-loaded pizza sauce – we did our taste test with some friends last weekend and they both gave it an overwhelming two thumbs up!  Plus, add sliced hearts of palm to the Pasta with Mint, Lemon & Spring Peas – it is fresh, light and perfect for spring!

The saucy French-Inspired Fish & Fennel Skillet and the Slow Cooker Meat & Vegetable Curry (video here if you are interested) are both crazy good.  We used bone-in goat stew meat for the curry, but it would also be excellent with beef, bison or venison stew meat.  The Sweet Orange Roasted Orange & Fennel Salad (video here) and the Spiced Cauliflower Rice would both be ideal sides for either of these meals.  Enjoy in-season fennel while you can!

For another quick and easy meal, the Swiss Chard & Bacon Quesadillas cook quickly and are super-easy to put together…feel free to use spinach if you don’t have Swiss chard on hand.

In honor of April Fool’s Day, we have also included the Black Dream Chocolate Cupcakes.  “Black Dream” is code for black beans, but no need to tell anyone until after they rave about how good they are!  They are a delicious gluten-free dessert that are high in protein and fiber.  A sweet treat with benefits!
