Why We Like It
Fantastic cupcakes! Why are they called "black dream?" Because of the secret ingredient...black beans (but don't tell anyone!) This delicious gluten-free dessert is high in protein and fiber and the perfect sweet treat!
Preheat the oven to 350 degrees
Make the batter:
Place in a food processor or blender and blend until smooth. Pour into greased cupcake pans or use cupcake liners, filling about 2/3 full for each cupcake. Bake for 20 minutes. When done, a knife inserted in the middle of a cupcake should come out clean. Let cupcakes cool before frosting.
Make the frosting:
Place cream cheese, peanut butter and vanilla in a large bowl and mix with an electric hand mixer on medium speed. Mix until well combined, about one minute. Add the powdered sugar and almond milk and mix again until smooth.
When cupcakes are cool, spread frosting on top and sprinkle with crushed chocolate chips.
Serve and enjoy!
Feel free to change up the topping instead of chocolate chips — use chopped nuts, coconut flakes, or sprinkle with powdered sugar.
Turn these cupcakes into a cake too! Adjust the baking time to 45-50 minutes for a 9 inch x 13 inch pan, or 30-35 for 8 inch rounds. For the round pans, allow to cool for 5 minutes, loosen the sides with a knife then cool 5 minutes more.
