One of my favorite cooking tricks is to turn one meal into two! This week, you can cook the Whole Chicken in the Crock Pot (or use chicken breasts…no de-boning required!) for meal one. Then, use the leftovers for the Loaded Chicken Salad Sandwiches for meal two — they are sensational! I have to say, I would make any of the entrees in this week’s meal ideas again in a heartbeat — they are all crazy good! If you have ever wondered what to do with eggplant…this is it…the Roasted Eggplant Pasta is delicious and bursting with flavor! And, the Middle Eastern Meatballs and White Fish (we used catfish) Sloppy Joes are both great-tasting, easy weeknight dinners! Plus, the Maple Berry Muffins work great as a side, snack, or as a grab-and-go breakfast! Enjoy the REAL meals this week!
