June is officially considered National Fresh Fruit and Vegetable Month but, as you know, Eat REAL America considers every month Fruit and Vegetable Month! So, we have you covered…the meal ideas this week are loaded with great-tasting ideas on what to do with a variety of fresh veggies such as asparagus, rhubarb, dark leafy greens, radishes, tomatoes, cauliflower, avocadoes, and more! From the Feta Stuffed Lamb Burgers to the Pizza Inspired Chicken Skillet to the Egg Topped Cauliflower Couscous, you can eat well this week!
And, if you read Tuesday’s coaching tip on figs, we have also included a couple of delicious ideas to help you get creative and include this amazing fruit in your routine! The Caramelized Onion, Fig & Gorgonzola Pizza has an excellent combination of flavors. It would be ideal paired with the Super Immune-Boosting Citrus Salad, which includes a garlic lemon vinaigrette that makes enough to last you all week long!
This is a perfect time of year to enjoy rhubarb – adding a little honey and roasting it in the oven turns it into a sweet tender topping for the Honey Roasted Rhubarb Salad. And we are nearing the end of asparagus season – don’t miss out on the incredibly flavorful Asparagus with Catalan Vinaigrette. Either of these would go great with the Open-Faced Smoky Greens & Beans.
Please let us know if there is a food you want to know what do to with or how to prepare — we love your feedback and ideas!
