In the Midwest, Spring is in full swing and I love it! We are taking full advantage of fresh asparagus, strawberries, and so much more…and the grill is back in action! I know I always say this, but we have some REALLY great meal ideas this week! The Shaved Asparagus Pizza (WOWZA flavor), the Pineapple Chicken Quesadillas with Strawberry Salsa (yes, fruit can be incredibly good in a quesadilla!) and the Arugula Salad with Orange Sesame Vinaigrette (I think I found a go-to favorite!) all scream “Welcome Spring!” The Jalapeño Burger is super easy and delicious and is reason enough to fire up the grill (hint: it goes great with your favorite beer or a refreshing glass of white wine!).
If you are still getting used to the idea of roasting vegetables, the Roasted Broccoli is the perfect example of how easy and flavorful it can be! I am pretty excited to say we “healthified” the classic Three Bean Salad — my mom said she can’t believe it tastes as good as the original version that was loaded with sugar — now that is healthy progress!
