In the spirit of Halloween week, we have included some festive meal ideas — yes, one is even orange and black! If you need something that practically cooks itself because you are getting kiddos ready to trick-or-treat, there is the Crock Pot Quinoa Pumpkin Chicken Stew – really good and the slow cooker does all the work for you! Or, if you want to enjoy an easy and cozy meal while you wait for the trick-or-treaters to come knocking, the Black Bean and Sweet Potato Soup will hit the spot! We are, of course, assuming the temperatures won’t be in the 80’s again next week!
There are a few others this week I can’t stop thinking about! The Cabbage Apple and Pear Salad is absolutely delicious and, believe it or not, it all comes together so quickly with a food processor or blender! I love both quick and easy meal ideas this week – the Asian Beef with Peppers and Creamy Southwest Pasta are both meals to add to the regular menu rotation! Happy Halloween!
