Week of September 8, 2014 - Weekly Meal Ideas


Fall officially doesn’t begin until September 23, but I am ready!  Not sure what I am more ready for…the cool weather (and, of course, football!) or all of the seasonal food that Fall brings!  Pears, apples, acorn and butternut squash…just to name a few!  We are easing into Fall with a couple of the meal ideas this week, one of which is the Cabbage and Summer Squash Pear Salad…the coconut milk gives the dressing a nice creaminess!  Enjoy that amazing “green stuff” called pesto in the Pesto Spaghetti Squash with Kale and Sun-dried Tomatoes!  Don’t forget, spaghetti squash is always a great alternative to pasta, which is true this week for the Salmon Puttanesca and the Linguine with Basil Tomato Sauce.  To keep those Hatch chile ideas coming, the Hatch Chile Burger is incredibly good, especially with the Grilled Sweet Potato Wedges!  The Kung Pao Chicken Lettuce Wraps are also delicious and will hopefully make a busy weeknight a little easier!

Thank you Beyond Napa for the wine pairings this week!  Just FYI — we have tried the Turkey Flat Rose (it is a dry Rose) and we loved it!

Stock up at the Kansas Grown Farmer’s Market this Saturday, 7 AM to Noon at 21st and Ridge!

  • Leland Garden will have green beans for the Crispy Green Bean Fries!
  • Jimmy at Kan-Grow has you covered with pears for the Cabbage and Summer Squash Pear Salad!
  • For the Kung Pao Chicken Lettuce Wraps, Elm Lane Farm has the perfect fresh greens!  Plus kale for the Pesto Spaghetti Squash!
  • Visit Phil and Lucy with Phil’s Farm for fresh chicken for the Kung Pao Chicken Lettuce Wraps!
  • Seiwert Farms will have shallots, squash and of course those amazing shishito peppers!
  • Ground beef from Graze the Prairie will make a wonderful Hatch Chile Burger!
  • Have you tried the Peaches and Cream Jam from Steve’s Jams and Jellies?  It is really good – they have so many great flavors, you can’t go wrong!
  • Pick up end-of-the-summer melons from Natural to the Corr before they are gone!

Remember, you can get your fresh salmon for the Salmon Puttanesca from The Seafood Shop and, if you haven’t already picked up roasted Hatch Chiles from Johnson’s Garden Center, you have a couple more weeks to take advantage of this great deal!
