Why We Like It
These super tasty lettuce wraps make a perfect quick and easy meal, but would also be great appetizers to serve or to take to your next gathering! The ingredient list may look a little long, but these lettuce wraps really do come together quickly! And they are so good!
Prepare the Chicken:
Add to a medium size bowl and stir to combine. Set aside.
Make the Kung Pao Sauce:
Add everything except arrowroot to a small bowl or mason jar. In a separate bowl, add the arrowroot and 1/4 cup of water and stir until smooth. Add this mixture to the sauce and stir or shake well. Set aside.
Cook the Chicken:
Add the oil to a large skillet over medium high heat. Add the chicken and cook for 5-8 minutes or until cooked through. Transfer the chicken to a plate and set aside.
Cook the Veggies:
Add the oil to the skillet (where you cooked the chicken) over medium high heat. Add everything else and cook for about 3 minutes, stirring occasionally, until the zucchini is just beginning to get tender. Add the chicken back to the skillet along with the Kung Pao sauce. Cook until the mixture is hot and bubbly and slightly reduced.
Serve and Enjoy!
Serve the chicken mixture on lettuce wraps, topped with chopped peanuts.
Instead of water chestnuts, try kohlrabi (pronounced kohl-rah-bee). It is a member of the cabbage family and the outside is light green and the insides are white. It’s kind of like a sweet radish and can be cooked or simply eaten raw. Check out our coaching tip for more on kohlrabi!
