Kung Pao Chicken Lettuce Wraps

Why We Like It

These super tasty lettuce wraps make a perfect quick and easy meal, and would also be great appetizers to serve or to take to your next gathering.  The ingredient list may look a little long, but these lettuce wraps really do come together quickly...and they are so good!

Prepare the Chicken:

  • 1 lb skinless boneless chicken breasts (chopped into 1/2 inch pieces)
  • 1 Tbsp low sodium soy sauce (OPTIONAL)
  • 1 Tbsp arrowroot (or cornstarch, for thickening)

Add to a medium size bowl and stir to combine.  Set aside.

Make the Kung Pao Sauce:

  • 2 Tbsp low sodium soy sauce
  • 2 Tbsp white wine vinegar
  • 1 1/2 Tbsp chili garlic sauce
  • 3 tsp brown sugar
  • 1 tsp rice wine vinegar
  • 1 tsp toasted sesame oil
  • 1 Tbsp arrowroot (or cornstarch, for thickening)

Add everything except arrowroot to a small bowl or mason jar.  In a separate bowl, add the arrowroot and 1/4 cup of water and stir until smooth. Add this mixture to the sauce and stir or shake well. Set aside.

Cook the Chicken:

  • 1 Tbsp olive oil

Add the oil to a large skillet over medium high heat.  Add the chicken and cook for 5-8 minutes or until cooked through.  Transfer the chicken to a plate and set aside.

Cook the Veggies:

  • 1 Tbsp olive oil
  • 1 zucchini (chopped)
  • 8 oz can water chestnuts (drained and chopped, or use small kohlrabi, peeled and diced)
  • 2 green onions (sliced)
  • 1 garlic clove (finely diced, or 1/4 tsp garlic powder)

Add the oil to the skillet (where you cooked the chicken) over medium high heat.  Add everything else and cook for about 3 minutes, stirring occasionally, until the zucchini is just beginning to get tender.  Add the chicken back to the skillet along with the Kung Pao sauce.  Cook until the mixture is hot and bubbly and slightly reduced.

Serve and Enjoy!

  • 1 head butterhead lettuce (or bibb lettuce)
  • 1/4 cup peanuts (chopped)

Serve the chicken mixture on lettuce wraps, topped with chopped peanuts.

Quick Tips

Instead of water chestnuts, try kohlrabi (pronounced kohl-rah-bee).  It is a member of the cabbage family and the outside is light green and the insides are white.  It’s kind of like a sweet radish and can be cooked or simply eaten raw.  Check out our coaching tip for more on kohlrabi!
