Oktoberfest is currently underway in Munich! Even if we can’t be part of the German festivities, we can bring a little bit of Munich into our kitchens…with the One-Pot Oktoberfest! This is a fantastic meal and is perfect for a fall day…and feel free to enjoy it with your favorite German or local brew!
Several of the meal ideas this week may sound fancy, but they are super easy and simple to put together…not to mention fantastic on flavor! The Simple Chicken Marsala is a great example. The Cilantro Pesto Cod and the Mexican Sloppy “Joses” are perfect quick and easy meals if you have busy weeknights ahead — you can even turn the Mexican Sloppy “Joses” into stuffed sweet potatoes or use them as a topping for spaghetti squash! The Zucchini Tots are a great way to use up any of the season’s leftover zucchini, plus you can use zucchini in the Spaghetti Squash Puttanesca too!
