Next Thursday is the first day of fall! In many parts of the country, Mother Nature must have missed the memo! We are staying optimistic that fall is on its way. And, of course, we are keeping things in-season this week with those end-of-summer goodies like tomatoes, okra and garlic, while also easing into autumn ingredients like apples, pears and butternut squash.
The Roasted Tomato & Garlic Marinara is a favorite…it’s loaded with flavor, especially using freshly harvested summer tomatoes! It would go great with either the Massaged Kale Salad or the Green Pear Salad with Candied Walnuts.
Apples, of course, make it feel like fall, and take pork chops to the next level in the Skillet Pork Chops with Apples & Onions. Now that butternut squash and sweet potatoes are in-season, it’s the perfect time to make the Fire-Roasted Sloppy Joes – try serving it over spaghetti squash! The Healthi-Fried Okra is an ideal side for either of these fantastic meals.
To satisfy a sweet craving this week, whip up a batch of the Chocolate Chip Cookie Dough Hummus – and don’t forget about the Brownie Batter and Snickerdoodle Cookie Hummus. Serve it with sliced apples for a sweet, yet still healthy, snack or dessert!
