This week’s meal ideas also include some “warm you up” meals using in-season ingredients such as butternut squash, spaghetti squash and apples. The One-Pot Oktoberfest and Spiced Middle Eastern Butternut Squash are ideal for a crisp cool fall night, and the Chicken Kale and Apple Salad is perfect for a weeknight dinner or makes an impressive lunch!
We took our favorite technique, roasting veggies, and applied it to squash with the Maple Garlic Roasted Squash. Ridiculously easy and loaded with flavor!
